Surprise Cupcakes

I love a surprise! Here’s one you can make for your next party:

Make a batch of mini-cupcakes this week. Fill the cups 2/3 c. full, and then bake for 8 minutes. Remove the cupcakes, and add your surprise….gumdrops, kisses, jelly beans, M&Ms are some good choices…Return to the oven and bake for another 3-4 minutes. Take them out of the oven, and let them cool for 10-15 minutes. Once cool, frost the mini-cupcakes and top each one with an additional surprise…not the same one that is inside however.
